Imagine some cannelloni that prompts one to boot up “Dark Side of the Moon,” or a chicken wing that is both the source of and the cure for the munchies.

While those illustrations may be in jest, some fine dining infused with cannabis and its relaxing, uplifting properties will soon be on the menu for Perfect Pairings Niagara.

Last month the catering company’s chef, Justin Salomone, began booking cannabis-infused dining experiences for October, when edible cannabis products become legal. Within a day, his phone was ringing off the hook.

“There’s a lot of ways to play with it,” said Salomone, who has been experimenting with cannabis-infused meals for quite a while now. Recently he whipped up some cannabis bruschetta using a lemon olive oil infused with THC, the psychoactive ingredient in cannabis.
